Shades of the Past Quilt Shop

 
We love to eat.  Plain and simple.  From snacking to cooking meals to show love for family or just ourselves we have an appetite for good food.  Below are the "staples" in our house, we hope you enjoy!


Salsa
8 cups tomatoes ~ 1 cup jalapenos ~ 2 1/2 cups onion ~ 1 1/2 cups chopped peppers
6 cloves of garlic mashed (or 2 Tablespoons) ~ 2 tsp cumin ~ 2 tsp pepper
1/8 cup canning salt ~ 1/2 cup vinegar~ 1 (15oz) can tomato sauce ~ 1 (15 oz) can tomato paste
Chop vegetables.  Mix all together in large pot.  Bring to a boil for 10 minutes.  Can & Enjoy


Byerlys Potato Soup
6 slices of bacon ~ 2 large carrots cubed or sliced ~ 1 tsp. sugar ~ chopped onion & celery to your desire
6 medium potatoes ~ 1 cup water ~ 1 1/2 tsp. salt ~ 1 1/4 tsp pepper ~ 1/4 cup flour ~ 4 cups milk ~ 1/2 pint heavy cream
Fry bacon, drain and crumble. Stir potatoes, onion, celery, carrots, water, salt, sugar and pepper in bacon drippings. Cook until tender (approx. 20 minutes)  Combine flour with 1 cup of milk until blended and smooth.  Add to potato mixture along with remaining milk.  Cook over medium heat, stirring occasionally until thickened.  Stir in cream and bacon and finish heating through - do NOT boil.


Slow Cooker Chicken Enchilada Soup
2 large chicken breasts ~ 10oz can of red enchilada sauce ~ 14oz can black beans drained & rinsed ~ 4oz can chili's                 
14oz can diced tomatoes with juice ~ 14oz can chicken stock ~ 1 Tbsp. garlic ~ 1 tsp salt~ 1/2 cup minute rice
Add all ingredients to slow cooker.  Stir to combine.  Cook on high 3-4 hours on High or 6-7 hours on low.
Use 2 forks to shred chicken before serving.  Serve with shredded cheese and chips


Bran Muffins
1 1/2 cup wheat bran (or raisin bran) ~ 1 cup buttermilk ~ 1/3 cup oil ~ 1 egg ~ 1/2 tsp salt ~ 1 cup flour
1 tsp baking soda ~ 1 tsp baking powder ~ 1 tsp vanilla ~ 2/3 cup brown sugar
Mix wheat bran and buttermilk together and rest 10 minutes.  Beat oil, egg, sugar, vanilla and add to buttermilk mixture.  Add salt, soda, powder and flour.  Mix well.  Pour into muffin tins and bake 15-20 minutes at 375 degrees. 

Pizza Hotdish
7oz spaghetti ~ 1 1/2# hamburger ~ 1/2 cup chopped onion ~ 1/4 tsp. garlic salt ~ 1/4 tsp. chili powder ~ 1 egg ~ 1/2 cup milk ~    1# mozerella cheese ~ pepperoni ~ jar of spaghetti sauce 
Cook spaghetti, drain and place into the bottom of a cake pan.  Mix beaten egg and milk and pour over the noodles.  Brown hamburger with salt, pepper.  Mix in garlic salt, chili powder and jar of pasta sauce.  Pour mixture over noodles.  Sprinkle with cheese.  Top with pepperoni and bake 1 hour at 350 degrees. 


Rattlesnake Pasta
1/4 cup butter ~ 1/4 cup jalapenos ~ 2 Tbsp. flour ~ 3 Tbsp. garlic ~ 3/4 cup milk ~ 10oz. chicken and/or shrimp
1/2 cup chicken broth ~ 1/4 cup green and/or red peppers sliced ~ 1/2 cup Parmesan cheese ~ salt & pepper
Melt butter, add flour and mix well.  Slowly add milk and chicken broth until combined.  Add parmesan cheese and cook until thick.  Add salt and pepper to taste, peppers and chicken or shrimp.  Heat thoroughly.  Serve over your favorite pasta


Oven Baked Chicken
Pound select chicken breasts thin.  Coat with olive oil on a baking sheet lined with tin foil
Mix together and sprinkle on both sides of the coated chicken breasts:
1 1/2 Tbsp. brown sugar ~ 1 tsp paprika ~ 1 tsp dried oregano (or thyme) ~ 1/4 tsp. garlic powder ~ 1/2 tsp salt & pepper
Bake 18 minutes at 425.  These are great as stand-alone chicken with side dishes or used in chicken alfredo for an added punch
